I arrived in New York in 1985 and worked with the most demanding chefs and proprietors in Manhattan. I worked with Gilbert Lecoze as he opened “Le Bernardin”in 1986 a 4 stars New York Times restaurant . Bouley Restaurant with David Bouley in 1988, Montrachet with Drew Nieporent in 1989, La Cote Basque 1990, Mondrian with Tom Colicchio n 1991, The Palm restaurant in 1992-96. From reservations, front and back of the house positions including,waiter, Sommelier, Captain, Maitre D and Proprietor.

In 1987 I became a full fledge real estate agent at the suggestion of Allan Schneider. It complemented my operation with Overseas Connection d.b.a. villasoftheworld.com . I have been involved with local property rentals and sales ever since! Motels, Hotels, Land and restaurants sales have been my specialty as well as International Vacation Villas Brokerage.

For over 7 years We managed one of the most successful Villa in the Caribbean, Cerulean villa , Located on Barnes Bay Anguilla. I oversaw everything, From marketing, to services, property billing, staffing, client arrivals, transfers, activities, reservations, turn over, menus, staffing, renovations,

As per Vogue at the time, this was the only professionally fully staffed villa in the Caribbean, a First in the Industry. We received at the villa the most sophisticated and demanding clientele in the USA. From celebrities to the who is who of Wall Street and more.

I am still active with Villasoftheworld.com, a Vacation Rental Villa Brokerage company and just joined Nest Seekers Int..

For 12 years I had a store front agency on Long Wharf with 17 employees and did over $1M in gross profits. Over $15M in sales.

PROFESSIONAL EXPERIENCE

In 2000, I directed the opening of Cerulean Restaurant at the 1770 house with a group of investors, from finding lease, funding to hiring staff, we obtained a 3 stars rating by the Long Island New York times. Team leader and profit driven who began working in the Hospitality Industry since 1979 in Paris France.

I did my apprenticeship at the restaurant “La Maree” in Paris France a 3 stars Michelin establishment.

I am professionally trained in France with all aspects of service in the dining room.

I am also a full fledge professional and very active musician and band leader for the past 35 years, locally and internationally. .www.radioeuropa.net

I represent my daughter Lilly Anne Merat (best musician female singer Dan’s 2012/2013) who is an incredible vocalist and I am assisting her with her career and material.

I have access and know all the local bands, acts, singers in the Hamptons and the NY region and I can help match their appeal with any type of event and at the right price.

I can also establish a great weekly night with some of them and insure success and build a great local following and so improve the bottom line at the bar and in the Dining room.

I can also offer musical assistance with any events, weddings, product launches.

I can also assist with music lists for dining rooms, rooms, and other communal spaces. Atmosphere and energy is key...A list for any hour of the day or night and or event...

I am very athletic and healthy. I do not smoke or drink. I have 2 children.

I speak 3 languages and understand 5-6 of them.

I have been around the world several times and so I am very familiar with traveling, airports, travel arrangements etc...

I am an excellent driver!
